Quinoa Almond Butter Crispy Treats


The name of these is slightly misleading. I wouldn't really call these 'crispy' - quinoa puffs are more chewy than crispy. But these are a healthier version of your favourite rice crispy treat. (I've made these with brown rice puffs if I've fancied something crispier :)).

Throw everything into a bowl, mix together and freeze. And only 1 bowl to wash up! I make these in a silicone muffin case but you could just as easily press it all into a baking pan and slice it up once it's been in the freezer.

Makes 12 small cupcake sized treats


2 cups puffed quinoa

2 tbsp chia seeds

2 tbsps date syrup (you could use maple syrup)

2 pinches of Himalayan salt

2 pinches of cinnamon

4 tbsp melted coconut oil

1/2 tsp vanilla extract

2 tbsp almond butter + 2 tbsps tahini (or 4 tbsps almond butter)


  1. Mix all the ingredients together in a bowl
  2. Divide the mixture amongst the cupcake/muffin tin or pour it into a pan (if you do this then line the pan with baking paper)
  3. Press the mixture down and flatten as much as you can so it's all tightly packed in
  4. At this point you can drizzle with a bit of melted chocolate (I usually do)
  5. Freeze for at least 3 hours and then if in a pan, slice up into bars or slices
  6. Store in fridge or freezer
